Ingredients
50ml veg oil
300g onion. chopped
50ml vegetable oil

15g dried mixed herbs
800g tinned chopped tomatoes
100g tomato puree
300g frozen mixed vegetables
400g tinned cannellini beans. drained and rinsed
20 fish portions. ('fingers' - these were made from frozen blocks of white fish)
1.Skg McCain Simply Mash, made to pack instructions
100g cheese. grated
A little parsley, freshly chopped
Instructions
1. Preheat oven 180°C, Gas Mark 6.
2. Heat the oil and gently fry the onions until soft and golden.
3. Add the garlic and mixed herbs cook gently for 1 min.
4. Add chopped tomatoes and tomato puree and vegetables.
5. Stir in the cannellini beans and bring the sauce to the boil, then reduce the heat and simmer for 20 mins. Check seasoning.
6. Grease a large oven proof dish and arrange the frozen fish portions in a single layer, cover with the sauce and top with the made up McCain Simply Mash.
7. Sprinkle with the cheese and freshly chopped parsley.
8. Bake for 30/40 min until piping hot and golden, and serve.
