Black Pudding and Poached Egg

Cooking time: 20 minutes


Original Choice Rosti

4 slices of black pudding

200g bacon lardons

4 free range eggs

knob of butter for frying


1. Melt the butter in a frying pan, add bacon lardons and fry for a couple of minutes then add the black pudding. Cook on both sides until crispy, set to one side and keep warm

2. Meanwhile to poach the eggs, bring a pan of water to a simmer, break the eggs into the water and cook for 3-4 minutes.

3. Cook the Original Choice Rosti as per pack instructions

4. Serve the Rosti in the middle of the plate topped with the black pudding and poached egg, scatter over the bacon lardons and a side serving of rocket and season with black pepper.
