One Pot Meal Arden Veggie Special

50ml vegetable oil

250g white onion, diced 

250g red onion. diced

1 large clove garlic. crushed

400g butternut squash. diced

250g mixed peppers. diced

200g courgette, diced

800g Ouorn pieces. diced

100g tomato puree

50g of soft brown sugar

50ml of Balsamic vinegar

10g of English mustard 1tsp dried rosemary

500ml hot vegetable stock

1.Skg McCain Simply Dice

1tbp parsley, freshly chopped


1. Pre heat oven 200°C, Gas Mark 7.

2. Heat the oil in a large pan. gently saute the onions until soft. add the garlic, then the vegetables, fry gently until softened.

3. Add the Quorn pieces.

4. Mix the tomato puree with the sugar. vinegar. mustard and dried rosemary, add to the pan and stir well.

5. Then gradually add the hot vegetable stock. Bring to the boil then reduce heat to a simmer. cook for 20 mins.

6. Pour into an oven proof dish.

7. Meanwhile, toss the McCain Simply Dice in the vegetable oil, add the parsley and use to top the vegetable and Quorn mixture.

8. Bake in the hot oven for 40-50 minutes. till the potato is hot and crispy. Serve piping hot.
