2kg chicken breasts, cut into chunky strips
6 red onions, cut into wedges
6 mixed peppers, cut into chunks
6 large tomatoes, quartered
100g tomato puree
400g tinned tomatoes, chopped
100ml vegetable oil
2kg McCain Chef Solutions Simply Roasts
40g Cajun Seasoning
1. Line a large baking sheet with greaseproof paper.
2. Simply mix all the ingredients together and spread evenly on the large baking sheet.
3. Roast in a hot oven 200°C/Gas Mark 7, for 40/50 mins. Turn halfway through cooking to ensure and even cook.
