One Pot Meal Spicy Chinese Chicken & Potatoes

A little oil (75g approx)

1.5kg diced chicken

500g onions, peeled and chopped

3 red peppers, sliced

30g garlic, crushed

60g fresh ginger, grated

50g chilli paste )optional)

100ml red wine vinegar

100ml soy sauce

500ml water/low salt veg stock

1.5kg McCain Chef Solutions Simply Slices

Chilli powder (to taste)

Dried parsley (to taste)


1. Heat the oil in a large pan and brown the chicken. Put in a large ovenproof dish.

2. Gently sauté the onions until soft and golden, add the garlic and ginger and cook for a furter minute.

3. Add the peppers.

4. Add the chilli paste (if using) and heat through to lose any rawness, add the remaining ingredients and bring to the boil, reduce and simmer for 30 mins.

5. Pour over the chicken.

6. Toss the McCain Chef Solutions Simply Slices with the chilli powder and dried parsley and use to top the chicken.

7. Bake in the oven at 200°C/Gas Mark 7, 30/40 mins until the McCain Chef Solutions Simply Slices are crisp and golden.
