Welsh leek, bacon and cheese croquettes

4kg McCain Our Chef Solutions Simply Mash – frozen
400g Leeks
400g Bacon
540g Welsh Cheese
Pepper to taste
2 Eggs
100ml Milk
500g Golden Breadcrumb

Preheat steamer 100%
Chop the leeks and place in steam tray
Place McCain Simply Mash & leeks in steamer for 12-15 minutes
Grill the bacon until crispy
Preheat the oven to 190 ˚C/375˚F/Gas Mark 5
Place mash in bowl, add the pepper and mix together
Add the leeks, chopped bacon and cheese, to the mash and mix together
Place egg in a bowl add the milk and whisk
Put breadcrumbs in a bowl
Form the cheese and mash mix into croquette shapes
Place each croquette in the egg mix then in the breadcrumb mix and place on baking tray
Place in oven for 15 minutes until golden brown. Serve hot.
